FSMA & Food Safety in Breweries: Prepare for Compliance in 2018

Join us for a Food Safety workshop focused on small brewers who have to be in compliance with the U.S. FDA FSMA regulations by September 17th of this year. The workshop will review the core rules that relate to breweries and layout a path to compile a food safety management document by establishing both a set of SOPs based on Good Manufacturing Practices, as well as putting together a food safety plan. A review of the documentation required for compliance will be discussed. The goal is to walk away with a draft of documents to finish back at your own brewery for completion.

Speaker(s): Sebastian Wolfrum is the executive brewmaster for Capitol Broadcasting Company with his main focus on the Rocky Mount Mills Incubator. Born and raised in Germany, Sebastian earned his certifications as a brewer and malster with the Ayinger Brewery outside of Munich in 1999. As a founding member of the NC Craft Brewers’ Guild in 2008, he continues to be very involved in the affairs of the small brewers in the region. By 2012, he received a certificate in distilling from IBD, London, as well as started Epiphany Craft Malt in Durham, NC, which provides an integrated regional supply to brewers and distillers.
